How to make shark fin soup
1. Put the dried shark fins in a bowl, cover with water and leave for 12 hours.
2. The next day, drain the water, rinse the shark fins and soak again in water for 4 hours.
3. Rinse fins, put in a saucepan.
4. Peel 140 grams of ginger root and place on the fins.
5. Pour water into a saucepan, put on the stove and cook for 3 hours.
6. Then strain the broth, removing the ginger. Put the shark fins in a bowl and let cool.
7. Clean the cooled product from skin and meat. They will not be required, leave only the cartilages.
8. Peel 1 head of onion, do not cut.
9. Place the cartilage from the shark fin in a saucepan, add chopped ginger and onion.
10. Pour with broth, put on fire and cook for 5 hours.
11. Strain the broth, lay out the cartilages separately, after rinsing them with water.
12. Soak dry mushrooms in warm water for 30 minutes, and then squeeze them out.
13. Rinse the shrimp, clean and remove the intestines.
14. Wash the chicken fillet and cut into strips.
15. Peel the remaining onion and chop finely.
16. Peel 10 grams of ginger, chop finely.
17. Pour sesame oil into a separate saucepan, heat it up and add onion, ginger, mushrooms, rice vinegar. Fry for 5 minutes. 18. Pour 1 liter of chicken broth into a saucepan, add cartilage and cook for another 15 minutes.
19. Pour in the rest of the chicken stock, soy sauce, add the chicken fillet, cornstarch and cook for 5 minutes.
20. Pour shrimps into a saucepan and cook for another 2 minutes.
21. Remove the bowl of soup from the heat, let it brew for 10 minutes and serve.
